Biscuits with cinnamon and raisins


300g plain flour 2 (semi-integral)

100 g of oil EVO

40 g of water

130 g of rice malt

80 g raisins

10 g of powdered ginger

zest of 1 lemon

a pinch of salt



Put together in a large bowl the water and the oil, then add malt, salt, ginger and lemon zest and mix with a wooden spoon. Add the raisins. Gradually add the flour and mix until the mixture will be workable with your hands, then move to the support surface and continue to knead briefly.

Now plain the dough 1 cm and cut out shapes with a round cutter. Put the biscuits on a baking sheet covered with parchment paper in the oven at 180 degrees for 15 minutes.
