If you don’t try you don’t believe that an omelette without eggs can be even more good! In fact, this omelette is made with a base of chickpea flour and water, so it has even more protein and tastes original.
You can have fun adding the ingredients of your choice, I put peas and onions, but are fine zucchini, artichokes and all the vegetables you like.
Ingredients for 4 people
100 g chickpea flour
300 g warm water
100 g fresh peas shelled
1 onion
4 fresh basil leaves
little extra vergin olive oil
pepper
sea salt
Proceedings
Merge the chickpea flour and water in a container and turns vigorously until there are no more lumps.
Combine the peas, chopped onion, chopped basil, little of olive oil, salt and pepper and stir.
Pour the mixture into a rectangular pan previously greased and floured.
Cook in a preheated oven at 180 ° for 20 minutes.
Serve the omelet cut into squares, or use it as a filling for sandwiches!
