Lemon muffins with chocolate

Good morning and good breakfast with these vegan muffins with lemon scent, made even more delicious with chocolate flakes.



♥ 300 g wholemeal flour
♥ 140 g of whole brown sugar
♥ 240 g almond milk or water
♥ 140 g extra virgin olive oil
♥ 100 g dark chocolate
♥ 18 g cream of tartar
♥ juice and zest of 2 lemons
♥ pinch of salt

♥ 1/2 teaspoon vanilla powder



In a bowl combine the dry ingredients, then the sifted flour and cream of tartar, sugar, lemon zest, vanilla powder and a pinch of salt.

In a tall glass add the oil, almond milk and lemon and blend with the blender. Now pour the liquid obtained on the dry ingredients and mix well with a spatula for a few minutes until the mixture is smooth and homogeneous.

Pour the mixture into molds previously oiled and floured filled to 3/4 of their height, distribute the chocolate roughly chopped the mixture into the molds and bake in preheated oven at 170 degrees for about 15 minutes.
