Pancakes


Do you think is possible to have the same taste and texture of the classic pancakes while not using milk or eggs for a lighter version of pancakes? After trying this recipe you won’t have any doubts!

Ingredients

♥ 100g wholemeal flour

♥ 120 ml almond milk

♥ 3 tablespoons rice malt

♥ 1 tablespoon flaxseed

♥ 3 tablespoons water

♥ 1 tablespoon corn oil

♥ 1 teaspoon baking powder

 

Proceedings

Pulverize the flaxseeds and put them in a bowl with 3 tablespoons of water. Let stand 15 minutes until the mixture has the consistency of a gel. Not using eggs, this gel will help to bind the ingredients together and facilitate the rise.

Merge then the liquid elements in a bowl, then the milk, oil, malt and flaxseeds gel. Blends everything.

Slowly add the flour in the bowl of liquid, and finally the yeast, mix again.

Awarded this batter, warms a nonstick pan the size of your choice (I like small pancakes) and with a ladle pour a bit of batter in it. When you see that the surface is creating small holes, turn the pancake and let it cook on the other side.

Serve on a nice plate, accompanied by maple syrup and a mountain of fruit that you like!
